The Livestrong site (http://www.livestrong.com/article/534079-a-cooking-alternative-for-dry-white-wine/), for example, lists several you can choose from. Also, the next time someone gives you a hard time about the alcohol cooking off, tell them that isn't the case; you can evaporate most of the alcohol, but trace amounts will almost always be left.
